Fish Recipes: Salmon Crunch Pie
As an avid fisher, you could eat fish for breakfast, lunch and dinner. But what about dessert?! “Fish for dessert?”, you say? Why yes, this Salmon Crunch Pie can be made for any meal at all, but how often do you get to eat fish for dessert? Do what you will with it, it’s delicious!
Salmon Crunch Pie
Ingredients:
- 1 ½ cups flour
- 1 cup shredded cheddar cheese
- 1 tsp salt
- 1 tsp. paprika
- ½ cup butter
- ½ cup chopped walnuts
- 1 can (14 oz) drained salmon
- 3 eggs
- 1 cup sour cream
- ½ cup shredded Swiss cheese
- ¼ cup mayonnaise
- 1 tsp grated onion
Instructions:
- Combine flour, cheddar, salt & paprika, cut in butter. Stir in walnuts. Mix well to make crust. Reserve 1 cup of the crust for the top of the pie.
- Press the crust into a 10-inch pie plate, well greased.
- Arrange salmon on top.
- Beat eggs until fluffy, blend in sour cream, cheese, mayonnaise & onion to make the filling. Spoon the filling over the salmon. Sprinkle remaining crust mixture on top of filling.
- Bake for 45 minutes at 350 or until centre does not jiggle and has risen higher than edge.
- Can be served hot or cold.
